MEAT LOAF

I am entering into the meatloaf wars with two recipes that I like. They are both totally different. I may be opening a Pandora's Box that will crash my server, but if you have a meatloaf recipe that you like just send it to me with a bit of the history on it. Now remember, most meatloaf recipes are very loose things. A pinch here a pinch there makes a whole different dish. So my challenge to you is to try to get your meatloaf recipe in some written order and send it. Depending on the volume of recipes, I will publish them for a period of 30 days and then store them for future reference. 

 

GRACE AND RONNIE'S MEATLOAF

 

3 Pounds Lean Ground Beef,  2 Packets Lipton Onion Soup Mix,  2 Eggs, 1 Small Can Tomato Sauce, 1/2 Cup Milk, 1-1/2 Sleeve Saltines Crushed, 2 Tablespoons Drie Onion Flakes, Salt and Pepper to Taste.

Mix all ingredients in a large bowl. Put in a 9X12 pan and form into a loaf. Spread about 1/2 cup Ketchup on the top and bake at 350 for about an hour. Check the center with a fork to make sure the meatloaf is done. You can use a meat thermometer also 9and it would be safer) , but the instructions I received on this one is to use a fork in the center to check for doneness. Well there you go. Recipe 1.

 

Note: you can add a bit more of the milk and crackers depending on whether it looks right. It has to be a judgment call on your part on this one. I have made it to the recipe and it turns out good, but I have also used a bit more and bit less etc. and it has turned out OK too. This is meant to be a moist meatloaf so just judge accordingly.

MY HUSBAND LARRY'S LOW CARB MEATLOAF

This one is his own concoction and makes a rather dry stable meatloaf that is good for sandwiches.

2 Pounds Very Lean Ground Beef.    2 Eggs.   4 Saltines crushed.   2 Teaspoons Almond Flour. (we use almond flour but since you probably don't have that laying around, you can use more crackers or bread crumbs) 1/2 Teaspoon Hickory Smoke Salt.   1/2 Teaspoon Montreal Steak Seasoning. 

Mix all this together in a large bowl. Put in a 10X13 pan and form into a loaf shape. Top with a small amount of BBQ sauce and bake at 375 for 1 hour or until done.

This may or may not be a low carb dish, but that is what he calls it, and he uses fewer  crackers so it is pretty low.

G.G.'s SPAGHETTI CASSEROLE

My dear friend Pam submitted this recipe and it has become one of my favorites. It has a few more ingredients than the classic baked sppghetti, but it is worth the effort . It was the creation of her husbands grandmother Margaret.

1 Pound Cooked Thin Spaghetti broken in half., 1-1/2 Pound Chopped Tomatoes, Pinch Sugar, Pinch Soda, 1/2 Pound Grated New York Cheddar Cheese, 2 Teaspoons Chili Powder (or more), 1/2 Pint Cream, 1/2 Cup Milk. Salt& Pepper To Taste.

Brown Hamburger, add salt and pepper to taste. Add onion, green pepper, tomatoes, chili powder, simmer until onion and peppers are soft. (I usually saute the onions and peppers before I put them in the hamburger tomato mixture). Stir in sugar and soda. Combine meat and spaghetti in large bowl. Stir in cheese, milk and cream. Cook in lightly greased 9x13 dish. Bake at 300-325 for 2 hours.

JIFFY SALMON CASSEROLE

1 Can Pink Salmon, 1/2 Can Peas, 2 Eggs, 1/2 Can Mushroom Soup, 1 Can Fried Noodles.

Combine all the ingredients in buttered casserole, saving 1/2 cup of noodles for topping. Bake 20 minutes at 350 degrees.

This is a great last minute dinner, and it is really cheap to make.

CRABMEAT CHOWDER

2Tablespoons Bacon Drippings, 1 Cup Finely Chopped Onions, 1 Chopped Bell Pepper, 3 Small Chopped Green Jalepeno Peppers, 1-1/2 Pounds Fresh Tomatoes diced, or 1 No 2 Can Tomatoes, 1 8Oz Can Tomato Paste, 1 Pound Sliced Fresh Okra, 1 to 1-1/2 Pounds Crabmeat, 1 Quart Hot Water, 1/8 Teaspoon Cayenne.

Saute onions and peppers in bacon drippings until onions are golden color. Add tomatoes and tomato sauce. Saute okra separately. Add okra, crabmeat, water and cayenne to tomato mixture. Taste for seasoning. Simmer 1-1/2 hours. Makes 8 servings.
