HOMEMADE ICE CREAM.

5 to 7 eggs beaten.     Approx. 4 cups sugar.     5 cups milk scalded.   

2 pints half and half.   4 tablespoons flour. 5 tablespoons vanilla.

Beat eggs, sugar, flour and salt in a mixing bowl till it is well mixed. Scald the milk and add egg mixture to it and cook over low to medium heat till thick stirring constantly. Let the mixture cool a bit, and then put in 1 gallon freezer and add the half and half and vanilla. Stir till thouroughly blended and freeze according to freezer instructions.

Rememberance's of Sundays and Homemade Ice Cream. On many Sundays in the summer my mother would make a freezer of ice cream. We would have homemade chocolate syrup to put on it, and with 5 little brothers there was never a shortage of strong young arms to crank the freezer. Freezing the ice cream was one chore mother didn't have to make them do. They knew what they had to do if they wanted that ice cream. Days and summers were so special in our childhood. We had a large family, and we didn't have a lot of fancy things but we did have a strong sense of family, and we were very adept at creating our own enjoyment.

FRESH APPLE CAKE

1/2 C. shortening
1 C. sugar
Cream shortening and sugar together, then add:
1 unbeaten egg
1 tsp. vanilla
1 1/2 C. flour
dash of salt
1 tsp. cinnamon
1 tsp. baking soda
2 C. fresh unpeeled apples, cut up
Spread thick batter into greased and floured long pan and put brown sugar and chopped nuts on top of batter (we prefer black walnuts)

Bake at 350 degrees for 35 min. or longer.

 No frosting necessary.
